Food insecurity is an economic and social condition that involves individuals having limited or uncertain access to healthy food. Despite the well-intentioned efforts of both governmental not-for-profit organizations in addressing food insecurity, well over one-in-ten households U.S., wealthiest nation world, experience every year. This literature review covered several government programs research interventions designed address insecurity. Results from highlight how Supplemental Nutrition Assistance Program (SNAP), The Emergency (TEFAP), not-for profit banks have demonstrated success improving However, prevalence among U.S. has fluctuated without any sustained decreases achieve a rate remains below 10 percent population. waste, which refers edible yet discarded at retail consumption phases, rampant as approximately 30 (66.5 million tons) wasted after leaving farm waste prevention involve rescuing edible, nutritious redistributing it who are insecure can promote environmental- public health through simultaneous reductions

Cassava peels are rich in polysaccharides but highly unexplored and underutilized, as they could be used to meet the increasing demand for clean-label foods. This study investigated effect of temperature on solubilization cassava peel during hydrothermal treatment determine emulsifying ability solubilized (SCP). Subcritical water conditions were employed via (120-200 °C; 2 MPa) or autoclave (127 0.2 treatments solubilize peels. The composition SCPs was determined, their assessed using interfacial tension zeta potential measurements. Under best (140 °C at MPa [hydrothermal]; 127 [autoclave]), reduced against soybean oil 12.9 mN/m 13.4 mN/m, respectively. A strengthened co-emulsifier system developed by incorporating with Quillaja saponins (QS) Tween 20 enhance performance. Dynamic measurements revealed synergistic interactions, showing a remarkable reduction from 12.94 5.33 mN/m. suggests that SCP has surfactant-like structure owing its amphiphilic hydrophobic chains (nonpolar region) attached -OH functional group (polar region). Combining second surface-active compound results an additive effect, reducing tension. These findings provide novel insights into carbohydrate-saponin binding elucidate impact composition, concentration, performance, which will assist development emulsifiers, contributing advancement food technologies, effectively replacing synthetic emulsifiers formulations, offering both sustainability functionality. systematic investigation processing interactions provides practical framework developing high-performance natural agricultural waste.
