Nitraria tangutorum Bobrov is a berry shrub with white flowers and red fruits, which grows in the deserts Tibetan Plateau, Mongolia, western China. Its fruit N. (NTF) contains various bioactive compounds, anti-fatigue, anti-inflammatory, neuroprotective functions. However, high saccharide content of NTF makes it unsuitable for diabetic patients. In this study, we fermented to obtain juice (NTJ), residue (NTR), are suitable diabetics consume. We characterized compounds NTF, NTR, NTJ, found that fermentation increased diversity greatly reduced sucrose, glucose, fructose while generating trehalose, has potential manage blood glucose levels. Further, NTJ displays anti-diabetic due properties. This study provides basis further clinical research on NTJ's function humans.
