Humulus lupulus, or hops, is a vital ingredient in brewing, contributing bitterness, flavor, and aroma. The female plants produce strobiles rich essential oils acids, along with bioactive compounds like polyphenols, humulene, myrcene, which offer health benefits. This study examined the aromatic profiles of five hop varieties grown Brazil versus their countries origin. Fifty grams pelletized hops from each strain were collected analyzed using HS-SPME/GC-MS to identify volatile compounds, followed by statistical analysis PLS-DA ANOVA. identified 330 found significant differences among different regions. For instance, H. Mittelfrüher has fruity herbaceous profile, while German-grown variety more herbal spicy. Similar variations noted Magnum, Nugget, Saaz, Sorachi Ace varieties. findings underscore impact terroir on profiles, Brazilian-grown displaying distinct compared counterparts origin, including notes α-acid content.
