The aim of the study is to assess risks deviations in quality white sugar Extra and TS2 categories based on color standard solution technological production process. Risk identification was carried out using expert evaluation method by a group five experts. risk priority rank calculated as product significance consequences, probability occurrence, failure detection, each determined 10-point scale.
