This study evaluates the effects of gliding arc discharge low-temperature plasma (GAD-LTP) pretreatment on drying performance and quality attributes blueberries. Fresh blueberries were pretreated under varying conditions—treatment durations 6 s, 12 18 s power levels 300 W, 600 900 W—prior to convective hot air at 65 °C. Results demonstrate that significantly reduced time, with an treatment W reducing time by 31.25%. Moisture diffusion coefficients increased both duration power. Under optimal conditions, total phenolic content improved up 33.47%, while anthocyanin retention initially declined then recovered, reaching a 7.9% increase over control. However, plasma-treated samples exhibited darker color due surface etching oxidation. Rehydration capacity improved, maximum enhancement 27.94%. Texture analysis indicated hardness decreased adhesiveness chewiness in treated samples. Overall, GAD-LTP enhances efficiency preserves bioactive compounds dried blueberries, offering scalable approach for industrial application.
