Deep Eutectic Solvents (DESs) are a novel class of organic liquids that becoming increasingly important in the literature for their green and catalytic properties peculiar structural features. Because these, they finding fruitful applications many different topics. One most explored one is use as effective extracting agents from food matrices waste valuable bioactive compounds, thanks to affinity with aromatic phenolic compounds. In this work, mixture glycerol/water at 1/2.55 molar ratio demonstrated be DES comparison experimental melting points theoretical curves. This approach used both liquid starting components first time our knowledge. was then tested agent on matrixes: onion, tomato apple peels; spent coffee grounds grape pomace.
