To explore the efficacy and mechanism of Coix seeds in treating herpes zoster (HZ) using an integrated computational approach. Network pharmacology, molecular docking, machine learning were employed. Disease-related targets collected from multiple databases, intersection with seed analyzed via PPI, GO, KEGG enrichment. A "TCM-Ingredient-Target" network was constructed Cytoscape. Molecular docking dynamics simulations performed for validation. Fifty-five overlapping identified, core including TNF, EGF, GAPDH. Enrichment analysis revealed key pathways such as inflammation immune regulation. confirmed strong binding affinity between active compounds targets. This study demonstrates that exerts anti-HZ effects through multi-target mechanisms, providing a theoretical basis developing novel multi-pathway treatment strategies.

Lactic acid bacteria (LAB), as key probiotic, play crucial roles in maintaining human health. However, their survival and functionality diverse habitats depend on ability to sense respond environmental stresses. Notably, active induction has emerged a promising strategy for regulating the biological activity of LAB, potentially enhancing health benefits. Therefore, this review summarizes beneficial effects induction, including acid, bile, oxidation, ethanol, heat, cold, radiation functional activities LAB. In addition, omics methods, silico analysis, gene editing technologies have greatly facilitated profound exploration stress regulatory network thereby aiding identification components adaptors. Through these advancements, LAB provide benefits by stress-related genes proteins, well inducing bioactive metabolite production. As result, they could enhance tolerance, cross-protection, intestinal colonization, adhesion properties, antialcohol liver protection vitro or vivo. This study highlights potential strategies role food applications.

Selenopeptides can be ideal dietary selenium (Se) supplements for humans. Currently, rice is not used much as a source of selenopeptides. Here, we executed the selenopeptidomics analysis selenium-enriched protein hydrolysates using full MS-dd-MS2 acquisition method and identified selenopeptides, including L{Se-Met}AK other Specifically, selenomethionine (SeMet) replaced methionine (Met) in protein-Oryzain alpha chain (EC: 3.4.22) generated selenopeptide (molecular formula: C20H38N5O5Se) during subsequent hydrolysis. This was 425–428 amino acid residues Oryzain chain. Thermal processing led to cleavage, which affected efficient retention Activation energy (Ea) locate quality control markers thermal degradation Therefore, this study established rate equation at 100 °C, 110 120 °C; pyrolysis products, L{Se-Met}A, LMA, LMAK, K1, K2, involving C–N cleavage on amide bond alanine lysine, C–Se Met; fit coefficients reaction models were ≥0.9248, could accurately quantify real-time kinetic process; LMAK had lower Ea 88.20 kJ/mol, made it easier produce. In summary, marker process, providing technical support

Foods, Journal Year: 2025, Volume and Issue: 14(7), P. 1256 - 1256

Published: April 3, 2025

Our previous research has shown that SDOs derived from yellow silk cocoons have hypotensive effects on rats in chronic toxicity testing. This study investigated the potential preventative and therapeutic benefits of hypertensive induced by L-NAME. The experiment involved nine rat groups: (1) normal control, (2) + 200 mg kg-1 BW SDOs, (3) (HT) (4) HT 50 (5) 100 (6) (7) enalapril (Ena), (8) soy protein isolate (SPI), (9) bovine serum albumin (BSA). In approach, received 40 L-NAME with studied substances during four-week investigation. given at doses demonstrated a significant decrease systolic blood pressure (SBP) without affecting heart rate (HR). studies, increased SBP experimental groups over first four weeks, resulting mean values above 150 mmHg. Administering SPI significantly reduced SBP. However, exhibited closer to group. functional vascular tests, dose had highest relaxation lowest contraction percentages, like control groups. found may inhibit manage hypertension both healthy safeguarding endothelial cells.
