Lactic
acid
bacteria
(LAB),
as
key
probiotic,
play
crucial
roles
in
maintaining
human
health.
However,
their
survival
and
functionality
diverse
habitats
depend
on
ability
to
sense
respond
environmental
stresses.
Notably,
active
induction
has
emerged
a
promising
strategy
for
regulating
the
biological
activity
of
LAB,
potentially
enhancing
health
benefits.
Therefore,
this
review
summarizes
beneficial
effects
induction,
including
acid,
bile,
oxidation,
ethanol,
heat,
cold,
radiation
functional
activities
LAB.
In
addition,
omics
methods,
silico
analysis,
gene
editing
technologies
have
greatly
facilitated
profound
exploration
stress
regulatory
network
thereby
aiding
identification
components
adaptors.
Through
these
advancements,
LAB
provide
benefits
by
stress-related
genes
proteins,
well
inducing
bioactive
metabolite
production.
As
result,
they
could
enhance
tolerance,
cross-protection,
intestinal
colonization,
adhesion
properties,
antialcohol
liver
protection
vitro
or
vivo.
This
study
highlights
potential
strategies
role
food
applications.
