Polyphenols have a strong binding capacity with proteins, but the behavior of polyphenols glycosylated proteins and effects on structure been less studied. This study used enzymatic modification to prepare an oligochitosan-legumin complex (OLC) investigate its interaction (-)-epigallocatechin gallate (EGCG) quercetin. Fluorescence spectroscopy experiments showed that site OLC EGCG was 27.7 ± 2.47 quercetin 19.5 2.92; one polyphenol affected other's ability bind OLC. The FTIR CD results secondary structural changes in after incorporating polyphenols, decrease content α-helix increase β-sheet. OLC-polyphenol complexes smaller particle size denser micromorphology. Moreover, had protective effect against thermal ultraviolet light treatments compared alone.
