Chicken with Armillaria mellea prepared via pressure cooking is a traditional Chinese delicacy great potential for food development. Optimizing its time crucial. In this study, chicken and were pressure-cooked different amounts of (20 min, 25 30 35 40 min). total, 101 81 volatile compounds identified by GC-MS GC-IMS, respectively. The results showed that the content was highest at min. Nonanal, decanal, (E,E)-2,4-nonadienal, (E,E)-2,4-decadienal, 1-octen-3-ol as most critical aroma time, which brought unique fat, oil, mushroom to during pressure-cooking process. optimal determined be min through sensory properties. summary, 35–40 Our research not only preliminarily conditions industrial processing dish cooking, laying foundation later production dishes international sales, but also stimulated innovative composite development promoted people’s exploration mechanism heat treatment on flavor taste.

In this study, pathways and mechanisms of action a new type Pleurotus eryngii polysaccharide (PEP) with known structural characteristics probiotic properties in the intestine were investigated. An vitro cell model was used to investigate protective effects complexes formed between PEPs their related products mucin against gut barrier damage. Dextran sulfate sodium salt-induced colitis determine interaction intestinal mucus (IMs) at different consumption times. Finally, effect damage investigated, as mediated by IMs. The result showed that PEP-related improved barrier. exhibited differential functional activities stages. normal mice, interactions IMs characteristics. From transport absorption standpoint, role driving health also clarified study.

To explore the differences in protein quality among classic medicinal entomopathogenic fungi and to evaluate their metabolic adaptability, we analyzed amino acid composition proteomic characteristics of Cordyceps sinensis (CS), militaris (CM), cicadae (CC). Quantitative analysis showed CM contained highest crude lysine, methionine, threonine, valine. CS adapted high-altitude hypoxia exhibited lower but elevated leucine, isoleucine, histidine contents, which may contribute membrane stabilization oxidative stress resistance. CC displayed higher non-essential acids such as arginine, proline, tyrosine, reflecting active nitrogen metabolism. Four-dimensional data-independent acquisition (4D-DIA) proteomics identified 495 differentially expressed proteins (DEPs). Compared with CS, upregulated glutamate oxaloacetate transaminases 2 (GOT2), dehydrogenase (GDH), argininosuccinate synthase 1 (ASS1) coordinately regulate flux through alanine-aspartate-glutamate network urea cycle, supporting intermediate replenishment for energy The upregulation branched-chain keto E1 subunit alpha (BCKDHA) acyl-CoA short/branched chain (ACADSB) facilitated integration catabolism TCA explaining species-specific content. This study presents first application 4D-DIA compare CM, CC, providing insights into divergence mechanisms fungi.
