Abstract Huangjiu , a well‐known conventional fermented Chinese grain wine, is widely consumed in Asia for its distinct flavor. Trace amounts of ethyl carbamate (EC) may be generated during the fermentation or storage process. The International Agency Research on Cancer elevated EC to Class 2A carcinogen, so it necessary regulate content . risk intake dietary mainly assessed through margin exposure (MOE) recommended by European Food Safety Authority, with smaller MOE indicating higher risk. Interventions are reduce formation. As urea, one main precursors formation primarily produced Saccharomyces cerevisiae catabolism arginine, construction dominant engineered strains favorable trend future production and application This review summarized carcinogenic mechanism from perspectives precursor substances, metabolic pathways after ingestion, assessment. methods constructing S. genetic engineering technology were reviewed, which provided an important theoretical basis reducing strengthening practical control safety, research direction was prospected.

Dietary deficiency of selenium is a global health hazard. Supplementation organic selenopeptides via food crops relatively safe approach. Selenopeptides with heterogeneous selenium-encoded isotopes or poorly fragmented peptide backbone remain unidentified in site-specific selenoproteomic analysis. Herein, we developed the Se-Pair Search, UniProtKB-FASTA-independent peptide-matching strategy, exploiting fragmentation patterns shared backbones to optimize spectral interpretation, along developing new selenosite assignment schemes (steps 1–3) standardize selenium-localization data reporting for selenoproteome community and thereby facilitating discovery unexpected selenopeptides. Using selenium-biofortified rice under cooking, fermentation, high-temperature high-pressure processing conditions as pyrolysis-thermolysis dietary model, probed single-molecule-level kinetic evolution novel selenopeptide "KKSe(M)R" qual-quantitative information on graph-theory-oriented localization calculations, abundance patterns, activation energy, rate constants at selenoproteome-wide scale. We ground-truth-annotated thirteen products inferred four pathways characterize formation reactivity main intermediate variables KKSe(M)R constructed an advanced probe-type ultrasound technique prior minimizing loss during processing. Importantly, reveal unappreciated pyro-excitation diversion time temperature matrices. These findings provide pioneering theoretical guidance controlling supplementation within safety thresholds.

Abstract Peptidomics strategies with high throughput, sensitivity, and reproducibility are key tools for comprehensively analyzing peptide composition potential functional activities in foods. Nevertheless, complex signal interference, limited ionization efficiency, low abundance have impeded food‐derived peptides’ progress food detection analysis. As a result, novel materials been born at the right moment that could eliminate interference perform efficient enrichment. Of note, few studies focused on developing enrichment sample This work summarizes development of endogenous peptide, phosphopeptide, glycopeptide utilizing employed extensively recently: organic framework materials, carbon‐based nanomaterials, bio‐based magnetic molecularly imprinted polymers. It focuses limitations, solutions, future prospects application peptidomics various advanced materials. The size‐exclusion effect adjustable aperture modification material enhanced sensitivity selectivity aided streamlining process cutting down time. Not only that, immobilization metal ions such as Ti 4+ Nb 5+ capture phosphopeptides, introduction hydrophilic groups arginine, L ‐cysteine, glutathione into effectively optimized glycopeptides. Although portion carefully constructed currently exhibit promising applications field analytical chemistry, there is reason to believe they will further advance through improved pre‐treatment steps.
