Traditional fermented foods are favored by people around the world for their positive health and taste advantages. Many of foods, including Chinese traditional produced through mixed-culture fermentation. Apart from reducing formation harmful compounds such as ethyl carbamate (EC) biogenic amines (BAs) during food fermentation, it is also difficult to precisely control regulate fermentation process based on environmental conditions alone, due complex microbiota an unclarified mechanism. In this review, key microorganisms involved in baijiu, soy sauce, vinegar production elaborated, relations between microbial composition aroma or quality discussed. This review focuses interpretation functions roles beneficial (functional) that participate discussion possibilities synergistic use functional improve safety foods. Conducting work toward isolation a challenge modern technology. Thus, methods mutagenesis strains summarized. Finally, limitations future prospects reviewed. provides overview applications with improvement sensory qualities

Selenium is an essential trace element for the human body, with chemical and physical characteristics of both metals nonmetals. has bioactivities related to immune system, antioxidation, anti-virus, anti-cancer. At same time, it also plays a role in reducing alleviating toxicity heavy metals. Compared inorganic selenium, organic selenium less toxic greater bioavailability. nanoparticles (SeNPs) have advantages high absorption rate, biological activity, low toxicity, can be directly absorbed by body converted selenium. gradually replaced traditional supplement broad prospects food medical industries. In this paper, chemical, physical, methods synthesis are reviewed, microbial nanoparticles, effects on crop growth, antibacterial, antioxidant, anticancer, anti-tumor systematically summarized. addition, we evaluate application nutrition enhancement, providing support animals, plants, humans.

Codon basis is a common and complex natural phenomenon observed in many kinds of organisms. In the present study, we analyzed base bias 12 mitochondrial core protein-coding genes (PCGs) shared by nine Amanita species. The results showed that codons all species tended to end A/T, demonstrating preference for this codon. In addition, detected correlation between codon composition adaptation index (CAI), (CBI), frequency optimal (FOP) indices, indicating influence on bias. The average effective number (ENC) PCGs 30.81, which <35, strong Amanita. neutrality plot analysis PR2-Bias further demonstrated selection plays an important role obtained 5-10 (ΔRSCU > 0.08 RSCU 1) species, GCA AUU were most widely used codons. Based combined sequence value, deduced genetic relationship different found large variations them. This study promoted understanding synonymous usage characteristics evolution fungal group.

Phage ecology has attracted increasing attention in recent years. Fermented foods have rich and diverse microbial communities, which are not only the creators of unique flavors food, but also good hosts for bacteriophages. However, at present, much is known about bacterial fungal communities their functions fermented foods, little bacteriophages that inhabit bacteria. This article reviews findings on phage diversity highlighting how these organisms influence relate to dynamics foods. The application food discussed, will help better control fermentation process future promote its further development by industry.
