ABSTRACT This paper presents an outbreak involving retail bakery cakes and a celebration at business with multiple sites. Bacillus spore-forming bacteria have been identified as the cause of “ropey bread” spoilage for over 100 years. Causative strains rope include B. subtilis other species. Thirty-five employees having event across 11 sites were questioned to characterize amount cake eaten, observations, symptoms. No human specimens obtained, but leftover was analyzed by Ohio Department Health Bureau Public Laboratory. The odds that caused symptoms 9.23 (1.02–83). presence odor decreased eaten 151 g (103–205 g), P = 0.001. Enteric developed 0.41–4.5 hours after exposure, 5 12 cases latent diarrhea. Cakes positive velezensis . appears be first mention contributor re-emergence in industry. Updates taxonomy starting 1973 may account why are historically listed without spoilage. Given ability effective biocontrol agent grow pH water activity levels like many baked goods, there is need study issues along entire food chain balance impact on additives production safety.
