Abstract Ginsenosides are the primary active substance in ginseng plants and have a variety of benefits. However, its light heat stability weak easy to decompose. This study used gum arabic (GA) maltodextrin (MD) as wall materials, 1% Tween 80 was emulsifier. Response surface methodology optimize preparation process total saponins stems–leaves Panax notoginseng (SLPNs) (SSLP) microcapsules by spray drying freeze techniques. Under optimal conditions, two better solubility lower moisture content (MC). The color spray‐dried SSLP greener bluer, brighter. In morphology, were spherical with slightly shrunk surface, whereas freeze‐dried ones lamellar porous. strong under different storage conditions vitro gastrointestinal digestion simulation. addition, both free contained multiple ginsenosides. At same time, had good radical scavenging ability. These results indicate that microencapsulation technology could improve bioavailability SSLP, which is expected provide reference for intensive processing SLPN. Practical Application After microencapsulation, stem leaf extract improved taste, laid foundation making more nutritious tasting food P. .
