Abstract Polysaccharides, natural polymers of monosaccharides, exhibit diverse biological activities due to their molecular structures and functional properties. Morchella esculenta , a precious edible mushroom with higher market value, is also rich in polysaccharides (MEP) holds potential as bioactive compound therapeutic food applications. This short review examines structural characteristics advanced extraction methods. MEP demonstrate potent antioxidative effects by modulating the Nrf2/Keap1 pathway, antidiabetic properties through α‐amylase α‐glucosidase inhibition, hypolipidemic via improved lipid metabolism reduced adipogenesis. Their immunomodulatory activity linked short‐chain fatty acid production, cytokine regulation, G protein‐coupled receptor activation, while hepatoprotective involve mitigating oxidative stress inflammation. Laminaran, a bioactive β-glucan derived from brown algae, has garnered significant attention due to its diverse pharmacological properties, including antioxidant, immunomodulatory, and mucosal protective effects. Despite promising research highlighting potential applications in functional foods, nutraceuticals, pharmaceuticals, the commercial utilization of laminaran remains limited, primarily challenges extraction efficiency, structural complexity, lack standardized methodologies. This review critically examines recent advancements extraction, purification, characterization, biological evaluation laminaran. Both conventional emerging methods—including ultrasound-assisted microwave-assisted enzymatic techniques—are evaluated for their scalability, sustainability. Background/Objectives: Alzheimer’s disease (AD) is a neurodegenerative characterized by progressive dementia and brain accumulation of Aβ-peptide-containing plaques, gliosis, neuroimmune changes, neurofibrillary tangles. Mushroom polysaccharides have been previously reported to anti-neuroinflammation activity through the gut–brain axis. This study aimed evaluate whether dietary intervention with Phallus atrovolvatus, recently identified edible mushroom in Thailand, could benefit on gut health alleviate AD-related changes. This study enhanced germanium (Ge) enrichment in the liquid fermentation of edible fungus Lyophyllum decastes order to boost its biological activity, particularly antioxidant and immunomodulatory properties. Through use single-factor Plackett–Burman designs, experiments revealed critical parameters affecting Ge enrichment, including oxide concentration, potato powder peptone levels. The optimization Box–Behnken response surface methodology resulted a concentration 3.61 mg/L, significantly enhancing biomass, protein, polysaccharide, flavonoid content mycelium. In contrast traditional fermentation, Ge-rich mycelial biomass by 30.97% elevated organic 50.19-fold. An analysis antioxidants that Ge-enriched water extract exhibited heightened augmenting TNF-α production RAW264.7 cells 73.29% at 200 μg/g.
