Abstract
Macroalgae
species
are
fast
growing
and
their
polysaccharides
already
used
as
food
ingredient
due
to
properties
hydrocolloids
or
they
have
potential
high
value
bioactivity.
The
degradation
of
these
valuable
access
the
sugar
components
has
remained
mostly
unexplored
so
far.
One
reason
is
structural
complexity
algal
polysaccharides,
but
also
need
for
suitable
enzyme
cocktails
obtain
oligo‐
monosaccharides.
Among
them,
there
several
rare
sugars
with
value.
Recently,
considerable
progress
was
made
in
discovery
highly
specific
carbohydrate‐active
enzymes
able
decompose
complex
marine
carbohydrates
such
carrageenan,
laminarin,
agar,
porphyran
ulvan.
This
minireview
summarizes
achievements
highlights
applications
now
accessible
abundant
renewable
resource
polysaccharides.
