Low-temperature storage is an effective method to extend the shelf life of harvested winter jujube fruit; however, quality fruit decreases after refrigeration. To enhance with minimum qualitative deterioration during cold storage, this study investigated effects different melatonin concentration (100, 150, and 200 µmol/L) treatments on (during white ripening stage) at 0 ± 1 °C (RH, 90 5%) for days. The relative indexes antioxidant system were measured every 15 results showed that concentrations could maintain fruit's firmness, retard redness, inhibit decrease in weight, total soluble solid (TSS), titratable acidity (TA), contents phenols, flavonoids, glutathione, ascorbic acid; they also inhibited increase conductivity, malondialdehyde (MDA), hydrogen peroxide (H2O2) content fruits enhanced enzyme activities (superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX), glutathione reductase (GR), (POD)). As a whole, µmol/L treatment had best effect. Therefore, can cold-stored postharvest by improving its capacity.

Abstract Phytohormones are naturally occurring small organic molecules found at low concentrations in plants. Pomegranate is a seasonal fruit known for its high nutritional quality but with limited shelf life. Thus, cold storage frequently utilized as conservation technique to prolong the life of pomegranate fruits. Nevertheless, valuable properties and technological pomegranates can degrade notably over time. The aim this study evaluate chemical stability five cultivars (“Purple Queen,” “Smith,” “Mr100,” “Sefri Ouled Abdellah,” “Kingdom”) during storage. These represent most widely cultivated varieties in region are among significant predominant Morocco, they have postharvest evaluated various aspects including (weight loss, color attributes ( L ∗, b C h °)), physicochemical parameters (pH, total soluble solids (TSSs), titratable acidity (TA)), bioactive compounds (total phenolic content (TPC), anthocyanin (TAC), condensed tannins (CTs), flavonoid (TFC)) 120 days at 4°C. findings indicated that weight loss pH increased gradually all cultivars, “Mr100” showing increase (0%–29.12%) (4.01 4.76). Regarding TPC, TFC, TAC, exhibited substantial reductions period, “Kingdom” variety experiencing TAC losses, averaging 84.82%, while Abdellah” showed notable TPC 69.97%.
