Anthocyanins, a subclass of flavonoids known for their vibrant colors and health-promoting properties, are pivotal in the nutritional science food industry. This review article delves into analytical methodologies anthocyanin detection quantification matrices, comparing quantitative topical techniques. Quantitative methods, including High-performance Liquid Chromatography (HPLC) Mass Spectrometry (MS), offer precise profiling individual anthocyanins but require sample destruction, limiting use continuous quality control. Topical approaches, such as Near-infrared Spectroscopy (NIR) hyperspectral imaging, provide rapid, situ analysis without compromising integrity, ideal on-site assessment. The highlights advancements chromatographic techniques, particularly Ultra-high-performance (UHPLC) coupled with modern detectors, enhancing resolution speed analysis. It also emphasizes growing importance techniques industry efficiency minimal preparation. By examining strengths limitations both realms, this aims to shed light on current challenges prospective advancements, providing insights future research directions improving foods.

As a highly economic berry fruit crop, blueberry is enjoyed by most people and has various potential health benefits, many of which are attributed to the relatively high concentrations flavonoids. To obtain more accurate comprehensive transcripts, full-length transcriptome half-highbush (Vaccinium corymbosum/angustifolium cultivar Northland) obtained using single molecule real-time next-generation sequencing technologies was reported for first time. Overall, 147,569 consensus transcripts (average length, 2738 bp; N50, 3176 bp) were obtained. After quality control steps, 63,425 high-quality isoforms 5030 novel genes, 3002 long non-coding RNAs, 3946 transcription factor genes (TFs), 30,540 alternative splicing events, 2285 fusion gene pairs identified. better explore molecular mechanism flavonoid biosynthesis in mature fruit, an integrative analysis metabolome performed on exocarp, sarcocarp, seed. A complete pathway map phenylpropanoids, flavonoids, proanthocyanins constructed. The results joint showed that 228 functional 42 TFs regulated 78 differentially expressed metabolites within phenylpropanoids/flavonoids. O2PLS key accumulated tissues albireodelphin, delphinidin 3,5-diglucoside, 3-O-rutinoside, 3-O-sophoroside, 10 structural (4 Vc4CLs, 3 VcBZ1s, 1 VcUGT75C1, VcAT, VcUGAT), 4 transporter (1 VcGSTF VcMATEs), VcMYB, 2 VcbHLHs, VcWD40s, VcNACs) exhibited strong correlations with glycosides. These findings provide insights into mechanisms accumulation fruit.

Pigmented rice grains are important resources for health and nutritional perspectives. Thus, a thorough dissection of the variation nutrients bioactive metabolites in different colored is global interest. This study applied LC–MS-based widely targeted metabolite profiling unraveled variability nutraceuticals long grain/non-glutinous black (BR), red (RR), green (GR), white (WR) grains. We identified classified 1292 metabolites, including five flavonoid compounds specific to BR. The profiles four showed significant variation, with 275–543 differentially accumulated identified. Flavonoid (flavone, flavonol, anthocyanin) cofactor biosynthesis were most regulated pathways among types. Most flavonoids, anthocyanidins (glycosylated cyanidins peonidins), phenolic acids, lignans had highest relative content BR, followed by RR. alkaloids, amino acids derivatives, lipids, vitamins (B6, B3, B1, nicotinamide, isonicotinic acid) higher contents GR than others. Procyanidins (B1, B2, B3) In addition, we 25 potential discriminatory biomarkers, fagomine, which could be used authenticate GR. Our results show that BR RR materials medicinal use, while an excellent source (amino vitamins) alkaloids. Moreover, they provide data science-based use varieties diverse industries.
