Consumers’ growing concern about health and well-being has led to increased interest in functional foods. This research aims evaluate the physicochemical antioxidant properties of a plant-based (PB) snack bar enriched with Coprinus comatus powder. The formulations exhibited wide range flavor textural characteristics. Two PB bars four commercial were evaluated by consumer panel healthy volunteers (n = 20). scored ‘like extremely’ on 9-point hedonic scale.
