Carotenoids are a group of pigments that widely distributed in the plant kingdom. They important dietary components with potential health benefits, including antioxidant and anti-inflammatory properties have been linked to prevention chronic diseases such as cancer, cardiovascular disease, age-related degeneration. It provides global perspective on role carotenoids human nutrition health, their sources, bioavailability, metabolism, physiological effects. compounds, beta-carotene, lycopene, lutein, zeaxanthin, others, differ chemical structures biological activities. found wide range foods, fruits, vegetables, grains, animal products, bioavailability is influenced by variety factors. explains challenges opportunities for increasing carotenoid consumption through interventions supplementation. However, efficacy these depends factors, cultural norms, food availability consumer preferences. Overall, this chapter comprehensive overview highlighting importance compounds disease management. also underscores need continued research further understand mechanisms which exert develop effective strategies populations around world.

Carotenoids constitute compounds of significant biological interest due to their multiple activities, such as antimicrobial, anticancer, antiadipogenic, antidiabetic, and antioxidant properties. Metabolic syndrome (MetS) comprehends a series metabolic abnormalities (e.g., hypertension, obesity, atherogenic dyslipidemia) that can affect children, adolescents, the elderly. The treatment MetS involves numerous medications, which, despite efficacy, pose challenges prolonged use, high costs, various side effects. derivatives have been proposed alternative treatments because they reduce serum triglyceride concentrations, promote insulin response, inhibit adipogenesis, downregulate angiotensin-converting enzyme activity. However, carotenoids are notably sensitive pH, light exposure, temperature. This review addresses activity lycopene, lutein, fucoxanthin, astaxanthin, crocin, β-carotene towards MetS. It includes discussion sources, extraction methods, characterization techniques for analyzing carotenoids. Encapsulation approaches critically reviewed alternatives prevent degradation improve performance A brief overview physiopathology epidemiology diseases, including MetS, is also provided.

The encapsulation of β-carotene was investigated using pullulan and whey protein isolate (WPI) as a composite matrix at weight ratio 20:80, employing both spray-drying freeze-drying techniques. influence processing parameters such the concentration wall material, flow rate, inlet temperature for SP encapsulants, well wall-material FZ examined in terms efficiency (EE). morphology, structural characterization, moisture sorption isotherms, thermal properties resulting encapsulants optimum conditions were determined. Their stability under various levels water activity, conditions, exposure to UV–Vis irradiation. efficiently encapsulated within structures, EE approximately 85% 70%, respectively. degradation kinetics structures followed first-order reaction model, with highest rate constants (0.0128 day−1 0.165 FZ) occurring an intermediate water-activity level (aw = 0.53) across all storage temperatures. photostability tests showed that extended β-carotene’s half-life 336.02 h, compared 102.44 h These findings highlight potential applications functional foods, pharmaceuticals, carotenoid supplements.

Background The relationship between serum levels of carotenoids and endometriosis remains largely unknown. aim this study is to assess the association major ( α -carotene, β β-cryptoxanthin, lutein/zeaxanthin, trans-lycopene) risk in US women. Methods data were obtained from 2001–2006 National Health Nutrition Examination Surveys (NHANES), which included a total 3,636 women aged 20 54. Serum trans-lycopene measured using high performance liquid chromatography (HPLC) with photodiode array detection. Endometriosis was defined as self-report. Weighted multivariate logistic regression analyses conducted evaluate associations risk. Additionally, restricted cubic spline (RCS) employed possibility nonlinear associations. Finally, subgroup utilized estimate influence several covariates on Results showed that, after adjusting for all taken into account, there significant lutein/zeaxanthin reduced (Quartile 3 vs. Quartile 1: odds ratio [OR] = 0.62, 95% confidence interval [CI]: 0.42–0.90; 4 OR 0.54, CI: 0.36–0.81, P trend 0.001). However, no other found multivariable-adjusted models that covariates. RCS analysis did not reveal any non-linear relationships. Subgroup indicated inverse only individuals under 40 years age, both White non-White populations, smokers, among those who had ever used oral contraceptives. Conclusion may offer protective effects against specific subpopulations. Further prospective research necessary validate these findings.
