The winemaking process generates a large amount of waste which can be profitably converted into resource. In this work, extracts from stalks, lees, and pomace Magliocco canino cv (Vitis Vinifera L.) were obtained using ultrasounds. A comprehensive metabolomics profile was carried out by high-resolving power mass spectrometry hyphenated with liquid chromatography. Fifty-nine compounds annotated successively verified, bearing different chemical classes. Free amino acids quantified in the extracts. Distinction glycosylated polyphenols vs their aglycones accomplished targeted semi-targeted LC-MS methods; then selected polyphenolic biomarkers studied antioxidant activity evaluated vitro human dermal fibroblasts assay, best extract used for synthesis an DX conjugate grafting reaction, to obtain innovative food ingredient endowed improved activity. in-vitro endothelium-dependent vasorelaxation, recorded both stalk lees could exploited development new antihypertensive nutraceuticals.

The extraction of bioactive compounds from wine lees involves a variety methods, the selection which is crucial to ensure optimal yields. This systematic review, following PRISMA guidelines and utilizing Web Science database, aimed examine current state this field, providing insights for future investigations. search employed strategies with truncation techniques Boolean operators, followed by three-step screening using well-defined eligibility criteria. A bibliometric analysis was conducted identify authors, affiliations, countries/regions, research trends. Thirty references were selected analysis, Spain standing out as main source on topic. majority studies (66%) focused alcoholic fermentation lees, while 33% directed towards malolactic lees. Binary mixtures (ethanol-water) predominant solvents, ultrasound being most used method (31.3%), highest average yields (288.6%) various evaluated compounds, especially flavonoids. potential highlighted, along need further exploring alternative technologies combination methods. A baked gluten-free pastry was formulated using milk kefir, rice, and different amounts of carob pulp flour, i.e., 20% (B1) 40% (B2). In all cases, B2 showed the most remarkable antioxidant properties in terms total phenolic, phenolic acid, flavonoid content, as well scavenging activity both aqueous organic media. This trend observed over a 6-day storage time. Lower cohesive interactions among dough aggregate domains were recorded flour amount increased. At same time, rigidity decreased order B0 > B1 confirmed by lower textural shown carob-added samples. Sensory analysis overall acceptability for B2, with sweetness, cocoa, gingerbread, rye aroma predominant descriptors. The glycemic index determination better score revealed medium GI value (62), comparison high GIs (115 100, respectively).

Wine production is one of the most important agricultural activities. The winemaking process generates a considerable volume different residues characterized as by-products, such pomace, seeds, stems, and skins. By-products are rich in polyphenols with antioxidant antibacterial properties may act bacteriostatic or bactericidal agents against food-borne pathogens, improving food safety by enhancing antibiotic efficacy reducing bacterial resistance. aim this study was to evaluate phenolic composition activity grape components (skins, stems) from three red varieties (Periquita, Gamay, Donzelinho Tinto) determine their antibiotic-resistant bacteria, including Escherichia coli food-producing animals Listeria monocytogenes products food-related environments. Ten compounds were quantified these varieties, specific found parts grape, acids flavonoids. Flavonoids abundant seeds malvidin-3-O-glucoside being main anthocyanin ethanolic extract showed vitro concentration-dependent reactive species like •NO O2•−.
