The Touriga Nacional grape variety is renowned in Portuguese red wines for its intense color and aromatic complexity, largely attributed to rich phenolic composition. Several factors influence the profile of wines, including edapho-climatic conditions, variety, winemaking techniques such as fermentation, maceration, barrel aging, maturation. In this study, technique was only controlled variable, allowing a specific evaluation impact on composition antioxidant capacity. Ten single-varietal wine samples from 2019 vintage, produced Cima Corgo sub-region Douro by different wineries, were analyzed. determined using colorimetric methods quantify total phenols, ortho-diphenols, flavonoids, anthocyanins, tannins. Antioxidant capacity assessed through 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2′-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS), Ferric Reducing Power (FRAP) assays. Since all shared same region, harvest year, fermentation main differentiating factor, enabling direct comparison extraction properties. Additionally, Reversed-Phase High-Performance Liquid Chromatography with Photodiode Array Detection coupled Mass Spectrometry (RP-HPLC-DAD-ESI-MS/MS) employed identify individual compounds. This study highlights key role modulating potential wines.

Over the years, there has been a tendency for an increase in global obesity. The World Health Organization's (WHO) 2024 report states that 2019, more than one billion people were obese, and this condition was responsible five million deaths, being obesity is prevalent among adults compared to adolescents children. Obesity chronic disease characterized by alterations adipose tissue. When excessive food consumed energy expenditure low, tissue undergoes hypertrophy hyperplasia. This process activates B cells induces transition of anti-inflammatory M2-like macrophages into pro-inflammatory M1-like macrophages. cells, acting as inflammatory mediators, stimulate CD8+ T promote macrophage infiltration tissues. triggers inflammation, increases oxidative stress, ultimately leads cellular death. During cytokines occurs along with decrease cytokines. By contrast, stress related reactive oxygen species (ROS), oxidation biomolecules, antioxidants. mechanism can be mitigated through several healthy lifestyle changes, primarily including regular physical activity eating. These factors help reduce mediators ROS, lowering inflammation stress. Honey is a multifaceted substance whose composition intricately affected by various biotic and abiotic elements generated in the bee colony’s surroundings, including botanical geographical origins, climatic conditions, soil characteristics, beekeeping techniques. Monofloral honeys are identified pollen analysis derived from nectar of predominant plant species, exhibiting rich sensory nutritional profiles, making them food matrices with unique characteristics excellent qualities. To explore monofloral honey potential harvested different regions Portugal, comprehensive study was conducted determination phenolic assessment biological activities. In addition to this evaluation, inter simple sequence repeat (ISSR) used help differentiate origin. The content antioxidant capacity were evaluated spectrophotometric methods, observing, general, differences between honeys. Citrus sinensis (Silves) exhibited lowest content, total phenols, ortho-diphenols, flavonoids, whereas honeydew (Vinhais) showed highest values. Regarding capacity, Lavandula stoechas (Almodôvar) presented values, while displayed values for both DPPH FRAP assays. relation ABTS assay, Metrosideros excelsa (Aveiro) Eucalyptus spp. (Arouca) highest. ISSR marker allows distribution samples based on honey’s origin, suggesting its role authentication.

Summary In the current study, polyphenols were extracted from chestnut ( Castanea sativa ) shells (CSS) by two eco‐friendly techniques, namely microwave‐assisted extraction (MAE) and ultrasound‐assisted (UAE). The bioaccessibility, phenolic composition bioactivity of CSS extracts explored upon in vitro gastrointestinal digestion considering a future nutraceutical use. flavonoid concentrations, bioaccessibility antioxidant/antiradical properties both decreased during digestion. was 25% 26%, respectively, for UAE MAE extracts. profile demonstrated that gallic acid, caftaric acid catechin most bioaccessible compounds techniques. unveiled notable radicals scavenging efficiency, particularly against HOCl (18.32–75.44% inhibition) ONOO − (16.78–86.11% inhibition), as well hypoglycaemic (6.95–17.99% α‐amylase neuroprotective (16.44–54.66% AChE Considering undigested extracts, extract revealed better results than extract.
