Background: Fruit and vegetable waste (FVW) is a global issue with environmental impacts. It contains valuable compounds such as polysaccharides, polyphenols, proteins, vitamins, pigments, fatty acids, which can be extracted for food applications. This study aims to review sustainable extraction methods FVW its potential in the industry. Methods: paper provides an overview of sources high value-added from FVW. Abstract According to the Food and Agriculture Organization of United Nations reports, approximately half total harvested fruits vegetables vanish before they reach end consumer due their perishable nature. Enzymatic browning is one most common problems faced by fruit vegetable processing. The perishability contributed various enzymes (polyphenol oxidase, peroxidase, phenylalanine ammonia‐lyase) ripening or cell wall degrading enzyme (pectin methyl‐esterase). In contrast, antioxidant (superoxide dismutase catalase) assist in reversing damage caused reactive oxygen species free radicals. cold plasma technique has emerged as a novel, economic, environmentally friendly approach that reduces expression while increasing activity enzymes; microorganisms are significantly inhibited, therefore improving shelf life vegetables.
