This study examined the safety of meat products from north Serbia (Vojvodina), smoked in traditional conditions, a PAH point view, and assessed possibility their reduction these types products. Samples dry cured products, bacons fermented sausages six different chambers on territory Vojvodina were examined. The contents 16 polycyclic aromatic hydrocarbons, United States Environmental Protection Agency list (16 US-EPA PAHs), sensory quality determined. total content PAHs was range 99.73 μg/kg to 412.76 μg/kg; it 36.43 188.86 47.23 270.60 μg/kg. lowest compounds determined conditions during 3–5 days (3–4 h per day) at distance 2.5 m between fire Generally, can be concluded that shortening smoking process is justified, because good with decreased obtained. Benzo[a]pyrene, whose maximum allowed 2 μg/kg, below limit detection all Vojvodina. Also, PAH4, sum benz[a]anthracene, chrysene, benzo[a]pyrene benzo[b]fluoranthene, ND 2.22 still greatly lower than set value. These results indicated as defined by EU Regulation 2023/915 criteria for contents.

This work aimed to analyze the PAH content in products smoked traditional smokehouses with direct and indirect heat sources an industrial way as element of monitoring Polish market products. research material comprised 12 meats (W) 38 sausages (K), medium or coarsely minced. The benzo(a)pyrene total four marker PAHs was determined by GC-MS. analysis showed a significantly higher level contamination using methods. results also indicate that natural casing is not barrier against during smoking, degree meat fragmentation, together small cross-section, increases this technological group. Concentrations exceeding permissible levels were found for more than 60 min. As part strategies reducing content, among others, changing furnace one, shortening time, lowering smoking temperature, artificial casings removing before consumption, drying product surface process, seasoned bark-free wood, well additional smokehouse equipment, are recommended.

Polycyclic aromatic hydrocarbons (PAHs) are environmental contaminants that can be found in various food products, including those intended for infants. Due to their potential health risks, it is crucial develop sensitive analytical methods the accurate determination of PAHs infant foods. This study describes development and validation a highly method quantification European PAH markers, namely benzo[a]pyrene, benzo[a]anthracene, chrysene, benzo[b]fluoranthene, using gas chromatography–tandem mass spectrometry (GC–MS/MS), baby samples. The first step was optimization sample preparation procedure, performed different based on QuEChERS approach, also testing extraction solvents. Several factors such as efficiency, selectivity, recovery were evaluated choose most effective procedure preparation. Furthermore, GC–MS/MS optimized, evaluating parameters linearity, sensitivity, accuracy, robustness spiked demonstrated excellent linearities with correlation coefficient higher than 0.999 over wide concentration range, limits detection range 0.019–0.036 μg/kg 0.06–0.11 μg/kg, respectively. Extraction recoveries between 73.1 110.7%, relative standard deviations always lower 8%. These findings compliant indications Commission (Reg. 836/2011). To assess applicability official control activities, survey conducted commercially available products. Four markers determined commercial samples belonging categories infants young children. outcome this monitoring showed contamination, all samples, below limits. In conclusion, developed provides reliable approach optimized preparation, instrumental parameters, results ensure 4 even at trace levels. could contribute assessment exposure support regulatory efforts safety quality products regular monitoring.
