Taking banana variety Musa balbisiana Colla as raw material, dietary fibre from its pseudostem was extracted by using alkaline extraction method.Response surface methodology (RSM) used to optimise the process and investigate impact of temperature, agitation speed, time on yield fibre.According optimisation result, following values for parameters were found be ideal: speed 300 rpm, temperature 58.92 o C, duration 41.89 min.These conditions yielded 77.05% fibre.The showed high content, insoluble in particular.It improved physicochemical functional properties.These properties indicate potential a nutraceutical with hypoglycemic hypocholesterolemic properties.
