Ammodaucus leucotrichus exhibits promising pharmacological activity, hinting at anti-inflammatory and anti-arthritic effects. This study investigated seed extracts from using methanol n-hexane, focusing on properties. The extract outperformed the n-hexane diclofenac, a reference drug, in trypsin inhibition (85% vs. 30% 64.67% 125 μg/mL). To assess the preservative potential of green extracts moringa leaves (ML) and orange peel (OP) in chicken sausages under refrigerated conditions, eight groups were tested over 16 days: control, CBHT (100 ppm BHT), OPAE (3% aqueous OP), MLAE ML), OMAE (1.5% OP+ML), OPEE ethanolic MLEE OMEE OP+ML) for quality parameters. Results showed no adverse effects on physicochemical parameters including pH, colour, moisture content. Among all, exhibited significantly lower TBARS values plate counts with higher sensory scores; however, comparable to CBHT. Principal component cluster analyses indicated that storage duration impacted more than antioxidant type. The study concluded OP ML individual combined may extend shelf life days, being most effective, showcasing their as natural preservatives replace synthetic additives.
