Plant oils in the form of triacylglycerols (TAGs) have important food and industrial applications. The fatty acid composition TAGs, especially their degree unsaturation, affects oil value Phosphatidylcholine:Diacylglycerol Cholinephosphotransferase (PDCT) facilitates exchange acids between phosphatidylcholine diacylglycerol, influencing unsaturation. In this study, we identified characterized two PDCT isoforms from soybean (Glycine max). Phylogenetic structural analyses revealed that PDCTs are widely conserved across Embryophyta share key sequence features among species. Subcellular localization assays using transient expression fluorescent protein-tagged GmPDCTs Nicotiana benthamiana leaves confirmed to endoplasmic reticulum. Expression yeast altered lipid while vitro enzyme microsomal fractions both catalytically active, preferring unsaturated substrates. Further analysis mutagenesis N-terminus several amino within/near predicted catalytic domains critical function. Lastly, stable overexpression Arabidopsis thaliana rod1 (pdct) mutant plants successfully restored a wildtype phenotype, providing evidence these genes encode functional PDCTs. Together, findings provide new insights into structure-function relationships, offering potential targets for bioengineering strategies aimed at optimizing composition.

This work studies the stabilization of Pickering-like emulsions using dispersions interpolyelectrolyte complexes (IPECs) formed by chitosan (CS) and sodium alginate (ALG), two polymers from natural resources, as aqueous phase soybean oil phase. The ability these bio-based IPECs to form stable was evaluated varying compositional ratio CS ALG (Z-ratio) volume fraction (ϕo). Turbidity, zeta potential, dynamic light scattering measurements revealed dependence IPEC properties on Z-ratio, with separation observed near stoichiometric ratios. Phase diagram analysis showed that oil-in-water (O/W) water-in-oil (W/O) could be obtained under certain combinations Z-ratio ϕo. Emulsion stability increased higher Z-ratios due interfacial activity reduced coalescence. Emulsions high ϕo exhibited transitions discrete droplets bicontinuous interfacially jammed emulsion gels (bijels), suggesting tunable morphologies. These results highlight potential CHI-ALG eco-friendly efficient stabilizers for applications in food, cosmetics pharmaceuticals.

A key objective of soybean breeding programs is to enhance nutritional quality for human and animal consumption, with improved fatty acid (FA) composition health benefits, expand use industrial applications. We conducted a metabolite genome-wide association study (mGWAS) identify genomic regions associated changes in FA ratios seeds influenced by environmental factors. This mGWAS utilized 218 plant introductions (PIs) grown two field locations Virginia over years. The revealed that 20 SNPs were significantly 21 ratios, while additional suggestive found 36 highlighting potential quantitative trait loci linked composition. Many these are located near or within the genes related phytohormone-mediated biotic abiotic stress responses, suggesting involvement factors modulating seeds. Our findings provide novel insights into genetic influencing oilseeds. research also lays foundation developing stable markers develop cultivars tailored profiles different practical applications under variable growth conditions.
