Abstract Purpose of Review Dietary phytochemicals, bioactive compounds derived from plants, have gained increasing attention for their potential role in cancer prevention. Among these, NRF2 (nuclear factor erythroid 2–related 2) activating dietary phytochemicals such as curcumin, sulforaphane, ursolic acid, and cyanidin demonstrated significant antioxidant anti-inflammatory properties, making them promising agents chemoprevention. Daucus carota L. extract is attracting interest as a natural colorant alternative. However, the presence of anthocyanins (ACNs), which are sensitive to pH changes, limits its application. To tackle this issue, water-in-oil-in-water (W1/O/W2) double emulsions emerging innovative solutions. Nevertheless, problem reaching robust systems for industrial use still needs be overcome. One important target reach high coloring power, minimizing impact on final product.
