This study explores the bioactive compound extraction from laurel (Laurus nobilis L.) leaves using a pulsed electric field (PEF) as standalone technique. The primary parameters impacting process were optimized through response surface methodology. In recent decades, there has been growing interest in the fortification of food products with antioxidants and phenolics derived from plant by-products. The present study focused on production a plant-based beverage enriched hazelnut cuticle extract to characterize its antioxidant content, phenolic profile, organoleptic characteristics. Maize wet fractionation by-products are primarily used as feed but offer potential for food applications. Arabinoxylans (AXs) and proteins particularly valuable due to their network-forming properties, which depend on molecular structure. This study assessed the effect of steeping conditions (acid type pH variation) combined with a pulsed electric field (PEF) strategy recovering these polymers, while also evaluating recovery yield, fraction composition, key AX characteristics. The physical properties were studied in selected fractions investigate process-induced structural changes. Lactic acid hydrochloric (pH 2.5) most effective enhancing protein fiber-rich (FF) protein-rich (PF) fractions, respectively, acetic exhibited lowest efficiency. However, bound polyphenols best retained FF when lactic was used, indicating damage AXs, compared other acids using higher pH.
