This study presents an innovative approach to producing virgin coconut oil (VCO) using crude bromelain extracted from pineapple core and immobilized in a chitosan-alginate matrix. The immobilization significantly improved enzyme stability, allowing for repeated use up 15 cycles while retaining over 50% of its relative activity. Key process parameters—including cream ratio 1:8 (w/v), incubation temperature 40°C, chitosan: alginate 7:10 (v/v)—resulted maximum VCO yield 38.99%. resulting exhibited excellent physicochemical organoleptic qualities, with high lauric acid content 61.07%, meeting commercial standards. Infrared (FTIR) GC-MS analyses confirmed the presence characteristic ester groups fatty profiles. Compared free bromelain, form offers cost-effective sustainable solution large-scale production by enabling reuse reducing waste. These findings highlight potential as reusable biocatalyst, offering practical scalable alternative enzymatic extraction enhanced product quality.
