Extracts rich in bioactive compounds from natural sources have received great interest due to their impact on human health. The aim of this research is focused the obtaining and characterization several extracts Juglans regia L. leaves four different maturity phases: young green (YGL), (GL), mature (MGL), yellow (YL), using solvents: ethanol (e), water (w), or water:ethanol (1:1 (v/v)—m) by employing methods: magnetic stirring (MS), ultrasound-assisted (UA), as well maceration (M). obtained were quantitatively evaluated through spectrophotometric Total Polyphenol Content (TPC-Folin–Ciocalteu assay) Antioxidant Capacity (TEAC assay). Phytochemical screening means Fourier-Transform Ion–Cyclotron-Resonance High-Resolution Mass Spectrometry (FT-ICR-MS) indicated presence 40 belonging phytochemical classes: phenolic acids, flavonoids, flavones, flavanones, flavonones, flavanols, vitamins, tereponoid, steroid, anthocyanidin, other compounds. Based TPC TEAC assays, water-ethanol mixture was found be proper extraction solvent, with best results being for YL plant material: 146.29 mg GAE/g DM (TPC) 11.67 mM TE/g (TEAC). This type extract may used various domains, such cosmetics industry, biomedical field, and/or design functional foods, relying composition.
