Apple pomace represents an underexploited source of bioactive compounds. This study examines the optimization total phenolic content (TPC) and antioxidant extraction yield apple (variety: Belorusskoje malinovoje) using response surface methodology. Abstract Purpose of Review Nowadays, more interest has been focused on the efficient use agricultural and food processing post-products. The remaining wastes accumulate in large quantities, resulting a burden environment. However, they possess potentially valuable compounds, making them suitable to recover essential oil from solid waste. This review evaluates production oils apple, citrus fruits, sour cherry, corn, rice, wheat, barley wastes, highlighting high levels bioactive compounds such as tocopherols, phytosterols, unsaturated fatty acids, which contribute their antioxidant antimicrobial properties. It is estimated that approximately 25% of waste remains after the apple juice pressing process. Combining this biomass with valuable compounds creates potential for reuse. To create a cost-efficient ecological process without any expensive steps, aim research was to examine using non-Saccharomyces yeasts (Kazachstania barnettii D1, Hanseniaspora uvarum D9, and Wickerhamomyces anomalus D11) low-temperature valorisation pomace.
