Shrimp processing generates substantial waste, which is rich in valuable components such as polysaccharides, proteins, carotenoids, and fatty acids. This review provides a comprehensive overview of the valorization shrimp mainly shells, focusing on extraction methods, bioactivities, potential applications these bioactive compounds. Various techniques, including chemical extraction, microbial fermentation, enzyme-assisted microwave-assisted ultrasound-assisted pressurized techniques are discussed, highlighting their efficacy isolating acids from waste. Increased mass manufacturing and the pervasive use of plastics in many facets daily life have had detrimental effects on environment. As a result, these worries heighten possibility climate change due to carbon dioxide emissions from burning conventional, non-biodegradable polymers. Accordingly, biodegradable gelatin chitosan polymers are being created as sustainable substitute for polymeric materials various applications. Chitosan is only naturally occurring cationic alkaline polysaccharide, well-known edible polymer derived chitin. The biological activities chitosan, such its antioxidant, anticancer, antimicrobial qualities, recently piqued interest researchers. Similarly, hydrolytic breakdown collagen protein offers medicinal advantages owing unique amino acid composition. In this review, we present an overview recent studies focusing applying fields. Oleogels are of high interest as promising substitutes for trans fats in foods. An emulsion-templated method was used to trap olive oil the chitosan crosslinked with vanillin matrix. Oil water emulsions (50:50 w/w) different content (0.7 and 0.8% a constant vanillin/chitosan ratio (1.3) were air-dried at temperatures (50, 60, 70, 80 °C) freeze-dried (-26 °C 0.1 mbar) produce oleogels. Only falling rate periods determined during air-drying kinetics successfully modeled empirical diffusional models. At drying temperature 70 °C, fastest. The viscoelasticity oleogels showed that elastic modulus significantly increased after 60 those dried 50 weaker. All binding capacity (>91%), but highest values (>97%) obtained threshold (50,000 Pa). oleogels' color depended on (independent method).
