This study aimed to investigate the thermal behavior and composition of volatile compounds, fatty acids polyphenols in paprika obtained from peppers different countries. The analysis revealed various transformations composition, namely drying, water loss decomposition acids, amino cellulose, hemicellulose lignin. main found all oils were linoleic (20.3-64.8%), palmitic (10.6-16.0%) oleic acid (10.4-18.1%). Abstract Power ultrasound is a kind of green and environmentally friendly processing technology.
