This study systematically investigated the antioxidant activities and phytochemical profiles of petroleum ether (PE), ethyl acetate (EtOAc), n-butanol (n-BuOH) aqueous fractions edible (tubers) non-edible portions (peels) Pachyrhizus erosus. The results showed that both tubers peels from P. erosus were rich in polyphenols flavonoids, whereas EtOAc fraction had highest polyphenol content, PE total flavonoid content. ABTS, DPPH, FRAP assays revealed significant activity, possessed better activity than tubers. UPLC-Orbitrap-MS/MS analysis indicated thirty compounds identified tubers, including twenty-one six phenolics, two coumarins, one lignan, some which have previously been to display anti-inflammatory effects via Nrf2-Keap1 NF-κB signaling pathways. These findings provide robust scientific evidence for health-promoting properties pharmaceutical potential erosus, its portion has great use as a natural food, cosmetic, industries.
