Abstract Seaweeds offer sustainable, low-calorie nutritional options to address global food demand. Their limited use is due a lack of understanding their flavor, influenced by volatile organic compounds (VOCs). Algae are a rich source of bioactive compounds that have wide range beneficial effects on human health and can show significant potential in the treatment hematological malignancies such as leukemia, lymphoma, multiple myeloma.
