Food allergy (FA) is acknowledged as a significant public health and food safety issue, due to its manifestation an amplified immune reaction antigens. Recently, probiotics within Lactobacillus Bifidobacterium have been highlighted promising strategy against allergic disease by modulating the balance of Th1/Th2 responses. However, allergy-alleviating effects probiotic Leuconostoc mesenteroides strains are unknown. Therefore, this study investigated potentials eleven L. on in vitro evaluating expression patterns interferon-gamma (IFN-γ) (Th1 cytokine) interleukin-4 (IL-4) (Th2 mesenteric lymph node-derived lymphocytes from ovalbumin (OVA)-sensitized mice. Among strains, WHH1141 incubation caused highest IFN-γ/IL-4 ratio. Oral administration (1 × 109 CFU/mL) OVA-induced FA mouse model for 40 days improved weight loss pathological symptoms normalized serum immunoglobulin E levels. Meanwhile, elevated gene expressions cytokines (IL-4, IL-5, IL-13) tight-junction proteins (ZO-1 Occludin) levels histamine jejunum were restored WHH1141. Furthermore, reversed reduced gut microbial diversity short-chain fatty acid (SCFA) levels, specifically increased Bacteroidota abundance, decreased Firmicutes abundance Overall, these findings suggest that exerts FA-alleviating mice, which involved with inhibition jejunal Th2 responses modulation microbiome composition SCFA productions. PRACTICAL APPLICATION: may be considered approach mitigation symptoms.

Food allergies (FAs) represent a significant and growing global health issue, with increasing prevalence across different age groups. This review provides comprehensive analysis of the epidemiology, mechanisms, risk factors involved in FA development. Currently, FAs are estimated to affect 2% general population, higher rates children (~8%). However, these figures may be inaccurate because reliance on self-reported data immunoglobulin E (IgE) testing, which not reflect clinically confirmed cases.
