Abstract Cardaria draba has recently gained recognition as a versatile herbal remedy utilized in culinary applications and phytotherapy, particularly for addressing issues related to stomach acidification, rheumatism, edema. This investigation involved the assessment of phytochemicals using LC-ESI-MS GC-MS techniques, alongside evaluations biological activities, including antioxidant capacity (DPPH assay) antibacterial properties (broth dilution method), across various extracts derived from leaves, flowers, stems, roots draba. A total 62 components were identified through high-performance liquid chromatography coupled with electrospray mass spectrometry, revealing phenolic acids, flavonoids, tannins key metabolites. The relationships among these metabolites further elucidated principal component analysis (PCA) heat mapping. Notably, stems flowers demonstrated highest scavenging activity, IC50 values recorded at 9.75 ± 0.74 8.14 0.62 mg/ml, respectively. Furthermore, methanol leaves exhibited significantly stronger effects compared other extracts, minimum inhibitory concentrations (MIC) 6.25 12.5 µg/ml, findings this study provide scientific validation potential C. source antimicrobial agents natural antioxidants, contributing human health food preservation.

Nitraria tangutorum Bobrov is a berry shrub with white flowers and red fruits, which grows in the deserts Tibetan Plateau, Mongolia, western China. Its fruit N. Fruit (NTF) contains various bioactive compounds, anti-fatigue, anti-inflammatory, neuroprotective functions. However, high saccharide content of NTF makes it unsuitable for diabetic patients. In this study, we fermented to obtain Fermented Juice (NTJ), Residue (NTR), are suitable diabetics consume. We characterized compounds NTF, NTR, NTJ, found that fermentation increased diversity greatly reduced sucrose, glucose, fructose while generating trehalose, has potential manage blood glucose levels. Further, NTJ displays anti-diabetic due properties. This study provides basis further clinical research on NTJ’s function humans.

Over the years, there has been an increase in demand for plant-based foods as alternatives. In line with this, this work explores production and vitro digestion of a fermented beverage (FPBB) produced pea rice proteins 0% (FPBB-C), 5% (FPBB-5), 10% (FPBB-10) uvaia pulp through lactic fermentation Lacticaseibacillus rhamnosus GG. The gastrointestinal process was conducted to assess bioaccessibility L. GG, total phenolic content (TPC), antioxidant activity before after simulating conditions. After 48 h digestion, highly viable GG cells remained throughout system.
