Fermented foods and ingredients, including fermentates derived from lactic acid bacteria (LAB) in dairy products, can modulate the immune system. Here we describe use of reconstituted skimmed milk powder to generate novel Lactobacillus helveticus strains SC232, SC234, SC212, SC210, Lacticaseibacillus casei SC209 SC229, demonstrate using vitro assays that these differentially cytokine secretion by bone marrow dendritic cells (BMDCs) when activated with either viral ligand, loxoribine, or an inflammatory stimulus, lipopolysaccharide. Specifically, SC232 SC234 increase cytokines IL-6, TNF-α, IL-12p40, IL-23, IL-27 IL-10, decreased IL-1β primary cell stimulated a ligand. In contrast exposure SC212 SC210 resulted increased IL-1β, IL-12p40 following activation stimulus LPS. Interestingly SC229 had little no effect on BMDCs. Overall, our data demonstrates have specific effects enhance key mechanisms are critical responses, suppress responses involved chronic conditions, such as Ulcerative Colitis (UC), Crohn’s disease (CD).
