Defatted hickory meal (DHM), a by-product of oil production, is protein source rich in essential amino acids. In this study, the functional properties DHM hydrolysate (DHMH) were assessed using in vitro and vivo assays context to its antioxidant memory-enhancing effects. To induce memory impairment, D-galactose (D-gal) was administered mice at dose 120 mg/kg body weight per day, DHMH orally doses 300, 600, 1000 day for 8 weeks. treatment led improved performance D-gal-induced memory-impaired mice, as observed Morris water maze test. Furthermore, mitigated accumulation amyloid beta 1-42 triggered by D-gal exposure. Notably, high-dose significantly reduced elevation pro-inflammatory markers, including tumor necrosis factor alpha, interleukin 1β, 6. Additionally, prevented decline total superoxide dismutase activity, glutathione peroxidase levels, while reducing malondialdehyde content indicative properties. Moreover, effectively histological alterations neurons within hippocampal CA1 area induced D-gal. Collectively, our findings suggest that may counteract dysfunctions resulting from oxidative stress injury brain, positioning it potential candidate use food.
