Defatted hickory meal (DHM), a by-product of oil production, is protein source rich in essential amino acids. In this study, the functional properties DHM hydrolysate (DHMH) were assessed using in vitro and vivo assays context to its antioxidant memory-enhancing effects. To induce memory impairment, D-galactose (D-gal) was administered mice at dose 120 mg/kg body weight per day, DHMH orally doses 300, 600, 1000 day for 8 weeks. treatment led improved performance D-gal-induced memory-impaired mice, as observed Morris water maze test.
