The aim of this study was to investigate the metabolic changes associated with anti-obesity effects fermented blackberry extracts in liver tissues high-fat-diet-fed mice using mass spectrometry-based metabolomics analysis. C57BL/6J were divided into eight groups: normal-diet-fed mice, high-fat diet treated extract, high-fat-diet by L. plantarum, and brevis. After 12 weeks, group exhibited a greater increase weight compared control group, among groups, administered plantarum showed most pronounced reduction weight. As primary organ responsible for amino acid metabolism, is crucial maintaining homeostasis. In our study, we observed that levels several essential acids, including isoleucine valine, decreased diet, recovered administration extract plantarum. Our results demonstrated potential as functional material disorders restoring some metabolism disturbances induced diet.
