Colorants are widely used in our daily lives to give colors diverse chemicals and materials, including clothes, food, drugs, cosmetics, paints. Although synthetic colorants derived from fossil fuels have been predominantly due their low cost, there is a growing need replace them with natural alternatives. This shift driven by increasing concerns over the climate crisis caused excessive fuel use, as well health issues associated consumption of foods, beverages, cosmetics containing petroleum-derived chemicals. In addition, many show health-promoting properties such antioxidant antimicrobial activities. Despite advantages, could not be readily commercialized distributed market stability, limited color spectrum, yields resources. To this end, biology approaches developed efficiently produce renewable resources high yields. Strategies diversify non-natural derivatives enhanced an expanded spectrum also developed. Review, we discuss recent strategies for enhancing production derivatives, together accompanying examples. Challenges ahead future perspectives discussed.

Antioxidants and prebiotics are popular functional foods known for their distinct physiological ameliorating benefits on type 2 diabetes mellitus (T2DM). Whether how a combined antioxidant-prebiotic supplement affects primary secondary T2DM outcomes is not known. We investigated the therapeutic effects of an antioxidant (anthocyanin from riceberry rice) with (dietary fibre rice bran Jerusalem artichoke) glucose control, lipid profile, oxidative stress, inflammation, cardiorespiratory fitness in patients. A total 60 patients were randomly assigned to receive antioxidant/prebiotic (supplement group, SG) or maltodextrin (control CG), (two capsules (350 mg)/meal after three meals before bedtime, 2.8 g/day), days. Venous blood samples collected at baseline days intervention assess metabolic variables (glucose, insulin, profiles, renal liver functions, inflammation). Nutrition status, anthropometry, body composition (DEXA) also measured. Analysis co-variance showed superior T2DM's profiles SG compared CG including reduced fasting (p = 0.01 within-group effects, p 0.03 interaction effects), glycated haemoglobin 0.004 0.002 interaction), low density lipoprotein 0.006 0.02 effects). No significant change was found within any these parameters. Kidney function's glomerular filtration rate improved but placebo CG. Intermediatory biomarkers significantly affected either group no effects. adverse detected following 60-day supplementation intervention. The findings suggest that anthocyanin-fibre may be promoted as adjacent therapy T2DM, intermediary mechanisms action require further research.

This research aims to develop instant rice from local black variety, Cempo Ireng, that is safe for diabetes mellitus. Instant was made through the process of soaking in sodium citrate, washing, cooking using a cooker, freezing freezer 24 hours, thawing at room temperature, and drying dehydrator. There were 3 formula including (1) 5% citrate (2) 50 0 C, (3) 7% C. All formulated then tested its nutritional content (including anthocyanin, dietary fiber, amylose, amylopectin, starch, water content, ash, protein, fat, carbohydrates). The also hedonic quality by 35 semi-trained panelists. 50°C has highest score color. temperature have same aroma. third best based on panelists' choices anthocyanin content. It glycemic index. results showed moderate index 60.
