Background/Objectives: Long COVID-19 is characterized by persistent symptoms lasting three months or more following SARS-CoV-2 infection. Nutrition has emerged as a modifiable factor influencing recovery trajectories and symptom burden; however, existing evidence remains fragmented across diverse study designs populations. This scoping review synthesized global on the role of diet nutrition in managing long supporting recovery. Methods: Following PRISMA-ScR Joanna Briggs Institute guidelines for reviews, we searched major biomedical databases studies published between 2020 2025. Eligible examined dietary intake, nutritional status, nutrition-related interventions adults with COVID-19. Results: After duplicates were removed, 1808 records screened, resulting 50 that met inclusion criteria—27 intervention 23 observational studies. Nutritional exposures included micronutrients (e.g., vitamins D, K2), amino acids L-arginine), multinutrient formulations, microbiota-targeted therapies probiotics, synbiotics), quality, whole-diet patterns Mediterranean diet). Approximately 76% reported improvements COVID-19-related such fatigue, mood disturbances, physical function, markers inflammation. Conclusions: Diet may support targeting inflammation gut microbiome to alleviate improve functional outcomes. Well-powered trials approaches, combined targeted supplementation, are needed confirm their potential scalable, accessible tools post-COVID-19 management.
