Curcuma longa powder was prepared by refractance window drying (RWD) and fortified. Fortification of dried turmeric with folic acid NaFeEDTA, along its characterization, achieved. Characterization techniques, such as FTIR, XRD, TGA, DSC, FESEM, particle size analysis, have been considered to study the morphological, thermal, crystalline properties resulting fortified turmeric. In vitro digestion studies were carried out determine retention nutrients after fortification. The RW-dried exhibited a stable average PDI values in range 1500-1600 nm, for 0.25-0.29, respectively. enhanced sharp high intensity peaks NaFeEDTA-fortified powder. affirmed bio-accessibility novel at 9.77 mg/100 g 12.74 NaFeEDTA fortification cases, Thus, findings confirmed that there no significant influence on characteristics product.
