Morus nigra L., or mulberry, is a susceptible fleshy fruit due to its high respiratory rate and low storage stability, which shortens shelf life makes it difficult commercialize in natura. Edible coatings, thin membranes produced directly on the desired surface, could improve food preservation, among other properties. Annatto (Bixa orellana L.) seeds are natural pigments with antioxidant activity. This work aimed develop pectin-based edible coating annatto extract increase of fruits, using mulberries as study model. The were randomly separated into five groups: without coating, coated different concentrations (0%, 5%, 10%), layer-by-layer treatment consisting pectin layer under 10% layer. samples evaluated for following parameters: titratable acidity, maturity index, mass loss, pH, soluble solids, moisture contents, bioactive compounds. group had best result index (25.52), while 5% showed better loss (37.28% 83.66%, respectively). Herein, was demonstrated that coatings delay maturation senescence mulberries, preserving compounds increasing life.
