Carob (Ceratonia siliqua L.) is a widely spread Mediterranean evergreen tree whose plant parts are rich in bioactive compounds with potential for application functional food production. leaves the least explored part of plant, and main interest polyphenols. Advanced extraction techniques, such as pressurized liquid (PLE), microwave-assisted (MAE) ultrasound-assisted (UAE) have not been sufficiently their extracting these compounds. Therefore, aim this paper was to optimize parameters (temperature time) PLE, MAE UAE carob leaf polyphenols, characterize individual by ultra-high performance chromatography tandem mass spectrometry (UPLC-MS2) determine antioxidant activity extracts. The optimal temperature time were 160 °C/5 min resulting total phenolic content 68.21 mg gallic acid equivalents (GAE) g−1. For UAE, conditions 70 °C/10 min, under which contents 78.80 55.98 GAE g−1 achieved, respectively. A 26 compounds, represented mainly myricetin, quercetin-3-rhamnoside acid, identified extracts obtained all three techniques. All showed high (0.46–1.05 0.50–0.58 mmol TE FRAP DPPH, respectively), correlated polyphenolic affected concentration ascorbic (0.03–0.52 mL−1), confirming that advanced possess products.

The food industry faces significant challenges in meeting the demand for healthier and more sustainable products, particularly search natural alternatives that optimize nutritional value of processed products and, at same time, improve their functionality shelf life. objective this study was to evaluate eggplant flour (EF) different concentrations (2-9%) as an alternative ingredient production Frankfurt sausages. physicochemical (Aw pH) chromatic properties, well antioxidant activity (ABTS, DPPH, ORAC), total phenolic content, flavonoids, sensory evaluation were analyzed. properties follows: Aw showed average 0.973, pH 6.35. Additionally, differences observed across treatments. values ranged between 586.4-1775.5 ABTS µM eq. Trolox/g sausage 550.7-1764.0 sausage, indicating improvement EF concentration increased. Treatments containing 2% (T2) 3% (T3) achieved acceptability rating close 4 ("I like it slightly"), demonstrating a balance acceptability, although higher adversely affected flavor texture perception. Eggplant effective choice enhancing meat products' quality life, contributing development options.

This study compared the efficiency of advanced supercritical CO2 extraction (SC-CO2) and conventional Soxhlet (SE) in isolation lipophilic bioactive molecules (BAMs) from oils different sea buckthorn (SB) berries (Leikora Ascola). A SB cake, a valuable by-product oil extraction, was analyzed for phenolic compounds antioxidant activity (AA). For this purpose, ultrasound-assisted (UAE) with 70% (v/v) ethanol optimized, following optimal UAE conditions were determined: ultrasonic power 60%, temperature 50 °C, time 20 min. The individual BAMs cake extracts chromatographically, while AAs determined using ORAC method. extracted SC-CO2 had higher content AA value than SE. Palmitic palmitoleic acids, β-sitosterol, α-tocopherol dominated Leikora oil, oleic, linoleic, α-linolenic acids carotenoids found Ascola oil. highest flavonols isorhamnetin-3-hexoside, isorhamnetin-3-rutinoside, quercetin-3-glucoside being most abundant. Oil variety also AA.

Wild olive tree, or oleaster (var. sylvestris), native to the Mediterranean region, is considered a traditional source of healthy food. fruit (WOF) exhibits several biological properties associated with its chemical composition. Although Greece has important genetic resources, including populations, limited information available on characterization WOF. Therefore, present investigation was undertaken study nutritional, bioactive (phenolics, tocopherols, and pigments), volatile profile, antioxidant WOF collected from Greece. Moreover, eco-friendly processes, ultrasound-assisted extraction (UAE), microwave-assisted (MAE), accelerated solvent (ASE), were applied obtain oleuropein-rich extracts Evaluation phenolic composition in carried out by LC-DAD-ESI-MS, while activity evaluated applying DPPH, ABTS, FRAP methods. Our outcomes show that Greek rich oleic acid (71.55%), total phenolics (64.89 mg GAE/g dw), tocopherols (107.05 mg/kg carotenoids (85.90 dw). Oleuropein (72.03 mg/g dw) main compound extracts. Also, characterized an increased level compounds, mainly terpenoids (46.73%). UAE more efficient than MAE ASE for recovering high activity. These results emphasized potential as alternative ingredient use food industry.
