To investigate the metabolic differences and mechanisms during fermentation process of coffee-grounds craft beer, HS-SPME-GC/MS untargeted metabolomics technology was used to study beer. Multivariate statistical analysis pathway were combined screen for significantly different metabolites with variable weight values VIP ≥ 1 p < 0.05. The results indicate that at time points T7, T14, T21, T28, a total 183 differential detected four days, 86 showing significant differences. Its content composition is mainly composed lipids lipid-like molecules, organic oxygen compounds, benzoids, accounting 63.64% metabolites. KEGG enrichment differentially expressed showed 35 pathways. top 20 pathways screened based on corrected p-value, enriched in such as protein digestion absorption, glycosaminoglycan biosynthesis heparan sulfate/heparin, benzoxazinoid biosynthesis. beer reveal quality changes process, providing theoretical basis improving having important practical significance evaluation system

Incorporating insect meals into poultry diets has emerged as a sustainable alternative to conventional feed sources, offering nutritional, welfare benefits, and environmental advantages. This study aims monitor compare volatile compounds emitted from raw carcasses subsequently cooked chicken pieces animals fed with different diets, including the utilization of insect-based ingredients. Alongside use traditional analytical techniques, like solid-phase microextraction combined gas chromatography-mass spectrometry (SPME-GC-MS), explore changes in VOC emissions, we investigate potential S3+ technology. small device, which uses an array six metal oxide semiconductor sensors (MOXs), can differentiate products based on their profiles. By testing MOX this context, develop portable, cheap, rapid, non-invasive, non-destructive method for assessing food quality safety. Indeed, understanding is crucial control measures production along entire supply chain, field fork. Linear discriminant analysis (LDA) was applied using sensor readings predictor variables classes target variables, successfully discriminating various samples total optimizing composition monitoring compounds, producers enhance both sustainability safety systems, contributing more efficient environmentally friendly industry.

In the modern world, interest in health products has increased due to attention a healthy lifestyle and balanced diet. However, there is need master technologies for production of preserve maximum amount useful substances use innovative methods processing raw materials. That why purpose this study was review analyse existing health-improving food products, particular, with plant Scientific technical literature regulatory documentation served as materials methods. A sample individual periods created analysed according selected indicators, namely volume production, dynamics vegetable, fruit, berry crops, commodity structure wholesale turnover processed fruits vegetables, baby dietary cocoa, chocolate, sugar confectionery average daily consumption basic microand macro-nutrients certain by population. It determined that market period 2015-2020 1.3 trillion USD value terms, while range traditional expanded an 2-3% per year. The vegetable crops households 2021 exceeded enterprises 6.2 times, 2020 – 5.5 times 2019 5.2 times. fruit Ukraine 6.3% more than 2020, 8.7% 2019. intake protein, fat, iron, niacin, ascorbic acid, thiamine, riboflavin, calcium, retinol, β-carotene equivalents, retinol (RET+ 1/6 B-CARQ) help determine deficit surplus macro- micro-nutrients diet consumers. general, including children's nutrition, promising competitive, feasibility using plant-based nutrition development new also confirmed
