The main object of this work was to characterize the structure and properties laboratory-made fish gelatin from cod skin in comparison with known commercial gelatins mammalian origin. This is one way we can contribute World Food Program foodstuff resources alternative natural sources. Our research based on combination an expanded set complementary physical–chemical methods study similarities distinctions hydrogels traditional novel sources underused marine resources. In work, have compared morphology, supramolecular colloid two (mammalian fish) extracted cold-water laboratory conditions. obtained results are novel, showing that our laboratory-produced much closer terms such parameters as thermal stability strength structural network under temperature alterations. Especially interesting experimental observations comparing both gelatins: it shown laboratory-extracted essentially more thermally stable its analogue, being even rheological one.
