Based on the current research wine grape variety recognition task, it has been found that traditional deep learning models relying only a single feature (e.g., fruit or leaf) for classification can face great challenges, especially when there is high degree of similarity between varieties. In order to effectively distinguish these similar varieties, this study proposes multisource information fusion method, which centered SynthDiscrim algorithm, aiming achieve more comprehensive and accurate recognition. First, optimizes improves YOLOV7 model novel target detection called WineYOLO-RAFusion, significantly localization precision compared with YOLOV5, YOLOX, YOLOV7, are models. Secondly, building upon WineYOLO-RAFusion model, incorporated method into ultimately forming MultiFuseYOLO model. Experiments demonstrated outperformed other commonly used in terms precision, recall, F1 score, reaching 0.854, 0.815, 0.833, respectively. Moreover, improved hard Chardonnay Sauvignon Blanc increased from 0.512 0.813 0.533 0.775 Blanc. conclusion, offers reliable solution task identification, distinguishing visually varieties realizing high-precision identifications.

Each year, several substances classified as hazardous human health and subsequently banned from agricultural use. In this study, we address age-old question: "Does wine improve time?" context composition. We gathered samples renowned French winemaking regions, covering years 1935 2000, assess levels identify specific substances. Our objective was determine if any currently pesticides were present in these aged wines whether detected pose risks under typical daily consumption patterns. findings revealed presence trace amounts 21 different proceeding Plant Protection Products (PPPs), most samples, albeit at considered non-threatening health. Quercetin (QU), a bioactive flavonoid with significant nutritional and antioxidant properties, plays vital role in the quality stability of wine. This study presents development molecularly imprinted polymer (MIP)-based optical sensor for selective sensitive detection quercetin red white wines. The combines molecular recognition capabilities MIPs properties nanostructured porous silica (PSiO2) scaffolds, which serve as transducer. MIP synthesis was achieved through novel room-temperature vapor-phase polymerization method using pyrrole functional monomer. Computational simulations were used to optimize interactions QU at level, explore binding resulting polypyrrole (PPy) matrix. Comprehensive characterization including UV–vis reflectance spectroscopy advanced surface analyses confirmed successful formation. exhibited high sensitivity dual linear response range (2.5–80 μM 80–200 μM), limit 0.7 μM. Selectivity tests against structurally similar flavonoids antioxidants demonstrated significantly higher quercetin, an imprinting factor 3.6. validated real wine samples, demonstrating ability detect without prior sample preparation. Specifically, it assessed aroma, appearance, taste, texture, respondents’ likelihood of consuming compared other options. A quantitative approach integrating descriptive experimental methods was employed. Sensory evaluations, conducted using hedonic scale, revealed distinct levels among the treatments. received moderate ratings appearance (40%) high aroma (30%), most respondents describing taste as sweet mild alcoholic note. garnered mixed feedback, 50% moderately liking 40% slightly flavor. achieved highest overall acceptability, highly rating appreciating taste. Regarding consumption preference, indicated willingness consume regularly, preference comparable rice wine. The highlights potential wine, particularly variant produced viable alternative in markets. Global wine consumption drives the interest for high-quality with enhanced health benefits. Yeast-produced tryptophan metabolites, including melatonin, a potent antioxidant, emerged as promising agents enhancing functional properties of food and beverages. This study represents pioneering work addressing whether melatonin supplementation during vinification affects Moldova red quality. Total phenolic/flavonoid contents, DPPH, FRAP assays were measured via spectrophotometry, anthocyanins, metabolites using UPLC-MS/MS UPLC-FLD, well cytotoxicity MTT assay. Results showed that addition winemaking process increased total content, antioxidant capacity evidenced by anti-DPPH radical activity. These effects might be due to stimulation phenolic compound biosynthesis, particularly anthocyanins malvidin-3-O-glucoside, peonidin-3-O-glucoside, delphinidin 3-O-glucoside, which found in treated wine. Additionally, revealed melatonin-enriched exhibited against two cancer cell lines, HCT116 PANC-1. Finally, concentration kynurenic acid, which, its cytoprotective properties, could further increase benefits resulting findings offer avenue future research melatonin-driven provide step forward natural product added value.
