Functional foods are ingredients which provide health benefits.Gnetum gnemon Linn (melinjo) seeds contain bioactive compounds with extremely high antioxidant activity and considered to have the potential be used as raw materials for functional food.The utilization of melinjo food must consider general specific quality standards ensure generated products deliver intended benefits.The purpose this study was determine nonspecific parameters commercial in form extracts flour well evaluate its capacity materials.The evaluated include drying loss, microbial contamination, moisture, total ash, insoluble acid extract yield, fat, crude fiber.The tested were phenolic flavonoid content, water-and ethanol-soluble compounds, marker compounds.The results showed that parameter values seed met standard's provisions.Analysis dark brown a thick paste, while light powdery.Both distinctive odor slightly bitter taste.The content higher than flour.To contrary, lower flour.Resveratrol, one seeds, identified by TLC HPLC.The found strong IC50 value 1.45 mg/ml.On basis together it concluded has material food.
