This
article
explores
the
novel
use
of
natural
deep
eutectic
solvents
(NaDES)
in
real
food
by
incorporating
them
into
mayonnaise,
either
alone
or
with
pigmented
rice
bran
(RB).
Results
showed
that
NaDES-fortified
mayonnaises
could
prevent
lipid
oxidation.
Notably,
NaDES2
(betaine:sucrose:water)
significantly
reduced
production
hydroperoxides,
which
was
maintained
to
an
average
2.6
mmol
LOOH/kg
oil,
is
2.9
times
lower
than
control
(7.5
oil),
7.4
mayonnaise
citric
acid
(19.1
oil).
NaDES2-fortified
high
tocopherols
levels
(0.97
g/Kg
oil)
and
volatile
compounds
from
secondary
effect
may
result
NaDES
altering
aqueous
phase
properties
notably
reducing
water
activity
∼0.1.
Finally,
pre-enrichment
bioactive
molecules
(e.g.
RB)
represents
innovative
perspective
promote
health
benefits
formulated
foods.
